Whenever I create a stacked bar chart, the value axis defaults to a scale of 0%-100% and all my stacked bars end up the same height. I change the scale but, for example, if I change it to "number" then the scale goes from 0-1. I am going mad... how do I get the scale to be number values related to the data, like any other chart? Thanks for any help!!

as I do not see your workbook I can only assume that maybe you choose the wrong chart type. Maybe a look at Chart Types in Microsoft Excel (http://peltiertech.com/Excel/ChartsHowTo/ChartType.html) could help as to my opinion you should have picked the middle chart in the first row (okay it´s column, not bar) instead of the right one. If I got you wrong please tell me... ;)
