I want to start entering data, but i'm not to sure weather my relationship structure is good enough to start inputing.

Hard to comment without a good understanding of your real world business model. Some thoughts anyways...

I'm particularly uncertain about the 'Name' table and associated tables (Junction, Gender, Origin).

What are the entities in 'Names' in the real world? How do they relate to Companies, Orders/OrderDetails, and Products?

Also, a product might belong to more than one category thereby requiring a junction table between Products and Categories
