View Full Version : Yet another thread deleted? No reasons?
ColinEssex 01-23-2010, 12:24 AM I posted on the "joke" thread, then it was moved without my knowlege to a new thread called "abcs" - now that has gone - no reason or notification.
What the hell is happening to this dictatorial forum? It's getting worse.
Or am I just not seeing "my" thread.
Col
Brianwarnock 01-23-2010, 03:04 AM I did not post to the thread ABCs as I did not deem Col's post worthy of comment, however I do think that it would be better if such threads were, at least initially, closed with a comment as to why.
The deletion of a thread without comment not only smacks of high handedness but is an insult to those that have posted.

Did the bad moderator place your thread in a more appropriate place?
You should boycott the forum or better yet: withdraw ask for your money back!

That was funny,
I was actually thinking about that thread and similar ones this very morning.
I think for my own part I will not be participating in them any longer. Rich and Col both glean some kind of perverse pleasure from insulting others, and engaging them in useless conversations.
This morning while I wasn’t engaged in the BS, I designed the ribs for another hull. Much more satisfaction was derived from that, than arguing with an idiot (or at least someone posing as one).

Thank god for that. At least then we won't have to read your disgusting choices of mixed fonts and colours.
You've said the same many times before though Josephine - can you try and stick to it this time?
Col
Fifty2One 01-23-2010, 08:49 AM I was very interested in the idea of the hull you posted in the other thread. I have been working with some high-modulus thermoplastics as a substution to carbon fiber in some applications. It might work as good skin for an underwater vehicle.

Just like all his others..............
ColinEssex 01-23-2010, 09:55 AM Did the bad moderator place your thread in a more appropriate place?
I wouldn't say the moderator (whoever it was) is bad - that seems a little harsh to me, but if you think the moderators are bad then that's up to you.
Perhaps a little insensitive and dictatorial perhaps. So it must have been an American mod. I just hope they have the guts to own up as to why they did it without any notice or comments.
Col

Yes you'd rather take part in a thread where some guy blowing his own trumpet call me a dipshit when I was arguing the same point as a three star AMERICAN general, now either the General's a traitor and should be tried as such or he too by American posters own definition is also a dipshit. Mmmmm,
Of course he'll claim "free" speech under article 1 of the constitution, oddly enough the first people to deny that freedom to the rest of the World are Americans who claim to live their lives under a "free speech" banner, the only insult my friend (aside from the personal ones aimed at me) is to intelligence and the ability to question the status quo
Fifty2One 01-23-2010, 10:42 AM Rich you are a potty mouth :)
I believe it is spelt like this: "Rich is a dip$hit"

Hey, blinkered here's your own mother country's take on the original topic, hell you might find a French translation so that you can understand it
http://www.belfasttelegraph.co.uk/news/world-news/us-accused-of-hampering-haiti-aid-flights-and-occupying-the-country-14640487.html
Fifty2One 01-23-2010, 11:30 AM Hey, geographically challenged one - that is from The Belfast Telegraph... I believe they still keep Belfast in Ireland (irony noticed about the occupation reference there, see I am learning this British irony thing) I live in Canada, you were closer geographically before when you guessed USA.
I am at a loss to see how translating something from French would benefit me more then translation it from English, but I can not find the French part of the Belfast Telegraph site.
Why would you think I am particularly interested in the Irish take on France's whining about USA's handling of the airport in Port au Prince?
:)

ColinEssex 01-23-2010, 12:01 PM Would you like to know? Everyone else who posted on that thread understood why it was being deleted, perhaps you need to think it out more ;)
Do you have evidence of how everyone knew who posted on the thread? Please post it.
Your words "understood why it was being deleted" indicates they all knew at the time and not after the deletion. Can you post as to how all the posters knew it was being deleted, yet I did not?
Thank you, I expect you'll take the North American stance and ignore the direct questions. However I shall continue to ask until you reply - I don't give up. Ask Bobby - he is still being questioned by me but refusing to answer.
Col
Fifty2One 01-23-2010, 12:19 PM Sorry Coline, if they did not inform you ahead of time and you could not figure it out yourself then there must be a conspiracy or something. I do not think that is a particularly North American stance, seeing as there are many things I have asked you in the past and have yet to receive an answer.
I do know all of the answers to your questions, but I will leave you to figure out the answers yourself. Maybe one of the other posters on the thread will let you in on it.
Dont have another tissy fit over it because you can not figure it out yourself. :)
Nice use of bold and italics by the way, must have learned some of that technique from Thales750 :)

Please answer the questions and don't try to deflect the topic. Would you like me to remind you of my questions?

No Col I said I would not respond to your and you boyfriends idiotic post.
There are others here that I will respond to, including yours and Richy's whenever you act civilized.
I didn't bother to spell checking this out of disrespect.
I tryed very hard to show you and Richard respect. I was raised that way. But even I have my limits. You Sir dont ever show respect.
It's a shame because I really do like all people.
Fifty2One 01-23-2010, 06:32 PM You always play that you are above North Americans so please feel free to look back and find them yourself. No need to remind me I can focus and I am patient.
I will wait for you to catch up on my previous questions before I address this matter, I feel that would be proper. I would not want you to feel that you were coping out. No need for me to indicate what you have dodged in the past, I am sure a person of your high morals and sense of fair play would not dodge responsibilities, that is just not the British way. :)

Thales750 01-23-2010, 07:30 PM Personally I'm a little embarrassed for all of us.
My only goal here is to reach out and find kindred intellects and others with varied backgrounds to try to expand my understanding.
And believe it or not actually make some new friends.
I hope this marks the end of some of the most ridiculous behavior that I've seen in quite some time.
And I am not pointing fingers; I am without a doubt right in the mix.

Of course. It is patently obvious that in English grammar, spelling and in many cases intellect, I am. That's why I try to educate you in these things to help you. But in many cases it is spurned, however I will continue.

My initial post on this thread was a serious attempt to find why the moderators/administrators feel that it is necessary to delete threads without explanation. How can we learn where and why the lines are drawn if we are not informed?
However fifty2one immediately reduced the thread to childish posturing, but since knows why the thread was deleted perhaps he would knidly inform me.
Brian
Fifty2One 01-24-2010, 06:28 AM No I will not inform you :)

Because it is good manners and courtesy to advise the thread starter that a thread is in some way stepping over some obscure mark that only the deleter knows about.
The thread should have been locked and a message posted as to why.
A straight deletion is just bad manners. If I was a mod I would never do it.
Considering the above, I think thou doest protest too much.
If seeking courtesy and an explanation is too much then that's my problem. Believe it or not, I do have certain standards, which others here seem to lack.

I think the issue here is the lack of explanation. A thread may deserve to be deleted but we should be told why
Fifty2One 01-24-2010, 03:59 PM Good manners and courtesy such as answering peoples questions and not ignoring them? Seems to be a virtue that you do not possess yet expect from others
I still await you to set the example by answering my previous questions :)

Vassago 01-25-2010, 11:31 AM I can see this thread's only purpose is to continue a "discussion," more like petty insults and cheap, child-like attacks, that was already removed for the same reason. I thought this was an Access forum. As such, I thought everyone here was an adult. If this is true, why call people purposely by names you know they will not like? Is it possible for you guys to debate something without being insulting as well?
Man, you guys make a mod's job hard.
It should be noted that no adults were harmed or injured during the making of this thread ( or any other thread on this forum for that matter)
Brianwarnock 01-25-2010, 11:53 AM Vass I know and appreciate all the hard work you guys do for this forum, but if the mods had just responded after the first posts we would not have had to put up with the relentless attack on Col, ok his other thread was, IMO as stated earlier not worthy of responding to, but I still believe that common courtesy demands an explanation for the deletion, plus it helps us all know where the line in the sand is.

This part is not an Access forum. You may have noticed that general discussions do not take place in the Access forums.
Personally, I think it is you that make mods jobs hard. I think Brian has summed it up.
This is not a dictatorship, try and remember that - ok, we bicker a bit, but it's all good fun as long as the language stays clean. It takes the sting out of reality and allows one to have a laugh, no real harm is meant. You'll never stop it, so why keep deleting threads for little or no reason?
Col
Fifty2One 01-25-2010, 01:44 PM Okay you could not bother to answer or acknowledge the questions and you expect your words to be gold. Word it how you like and become tired if you must, going by the rude and ignorant company you keep I am not too surprized at all.

Fifty2One 01-25-2010, 01:52 PM Someone clicks on Report Post to mention that someone has posted a derogatory term or a hateful message and nothing is done. Not even an excusing PM to say "No because" or bullshit like "we will monitor this". So much effort is put into banning spam and the trolling continues on and on. And I do not pretend my shit does not stink because I have posted shots and snipes at people. Only because I can, it is permitted and going by some of the posts by "VIPs" this sort of behavior is welcomed and condoned.
What is so hard about being a mod? All you have to do is jump on the spam that gets past the filters and people flag for you.

That's fair enough. It would have been easy to clean up except the same people who report posts as offensive, end up responding to those posts and continuing the discussion. How about, if you report a post, don't respond! I would think this to be common sense.

I realize it's not an Access SECTION of the forum. My point was, it's not a place children would be likely to visit. I'm not always seeing that by some of the posts I see made. I know it's not a dictatorship, but when does the language stay clean? There was plenty in the thread this one references and this thread alone to completely dispute that. And when people quote it, and continue it... you see my point? You guys can have your fun, just keep it fun for all.

I and the other mods have handled every post reported rather professionally in my opinion. Since you want to publicly complain about the job we do, no one is forcing you to stay. The one time you reported a post, I handled it as justly as I could. If you think I didn't do my job, feel free to report to the admin. I've already answered one of the things hard about being a mod that YOU yourself do rather religiously. Since you seem to want everything public, stop reporting posts and then replying to them, especially leaving the post you are replying to in your message. Replying to a reported post is a little hypocritical, don't you think?
Thales750 01-25-2010, 03:17 PM I can see this thread's only purpose is to continue a "discussion," more like petty insults and cheap, child-like attacks, that was already removed for the same reason. I agree, but in the interest of fostering good relations with our British cousins we must continue to attack Col and his sidekick Rich, and expose them for the Morons that they are.
We would not want people to get the impression that their rhetoric is supported by British folks that are not confined to mental wards.
I’m sure the British government has done all it can to rid these two of their delusion, so I was thinking that in light of the obvious failure to cure them, I would try a little tough love and make sure their delusions are not heeded by potentially vulnerable persons.
Fifty2One 01-25-2010, 05:01 PM I have reported more then one post. Also I would not doubt that you would consider you are doing a proper job. Not too many people get into things thinking they will give it a half assed attempt. Replying to a post after reporting is due to percieved inaction from moderators, so no I do not view it as hypocritical. As I had mentioned, unless there are an unbelievable quantity of reports, it would be proper to inform someone who lodges a complaint there are reasons their request was not actioned. Even if it was just bs lipservice that the matter is being looked into. If there is such a huge quantity of reports to prevent this then either there are not enough mods or there are boundries being crossed too often.
Of course going by your buddy list here this could be a waste of your attention, which would be hypocritical of you.
LOL, I would believe you except some people seem to take so much way too personal on this forum. This is what turns into personal attacks and reported posts.

ColinEssex 01-25-2010, 11:50 PM we must continue to attack Col and his sidekick Rich, . . . . . .
Now who's inflaming the situation. We don't attack people, we just report the facts, obviously it is at odds with your censored TV but that's too bad.
Col
statsman 01-26-2010, 01:32 AM "The Facts" consist of the hard information devoid of opinion and not slanted to support your point of view.
If I ever saw a posting in the 'Cooler that conformed to the above I would probably have my eyes checked.
I include posts made by myself.

THat's Bollocks and you know it- we are just as censored as our Yank cousins ...just in different ways - the Goverment here surpresses (?) information all the time - if you live in the UK then the newspapers/news can be effected by the goveremnt of the day - the Yanks however don't get censored by the UK goveremnt and visa versa - we can report on items that the US goverment surpressses
ColinEssex 01-26-2010, 04:35 AM If there is such a huge quantity of reports to prevent this then either there are not enough mods or there are boundries being crossed too often.
Or people like you are too sensitive and you just report any post that disagrees with your opinion.
BTW - still waiting for my questions to be answered. Shall I repost them again for you?
Oh, and I'm happy to answer your question(s) if you repost them as I missed them first time round - I seldom spend time reading your posts, I just scan them as they're hardly worth reading. It's not very often you have anything interesting to say.

So settle in for a long ride.
Americans are always looking for under privileged folks that need a helping hand. It’s our duty, and since we are obviously the most qualified, we will always be there for you, Col.
It makes me feel so good to be able to help. All this time you have been crying out for help, and I just missed it.
Col, I’m so sorry, I won’t neglect you again.
Brianwarnock 01-26-2010, 05:00 AM That's fair enough. It would have been easy to clean up except the same people who report posts as offensive, end up responding to those posts and continuing the discussion. How about, if you report a post, don't respond! I would think this to be common sense.
Replying to a reported post is a little hypocritical, don't you think?
I have never reported a post. I think if I did I would reply to the thread atleast one more time to inform the poster that I had reported him and why.
This gives the poster an opportunity to reflect on his posting and maybe withdraw his comments with an apology.

As a former moderator on a few sites, let me respond with a hearty "ha ha ha". This is the internet, where everyone is an expert in every field, no one is ever wrong, and a person's gender is always a mystery.
I will second the whole lock post/explanation rationale though. The objective to locking a thread should be to explain to the posters that content of the thread was not acceptable. Leaving people to guess why a thread was locked (or simply deleting it) is a bad idea.
Also, Vassago, as a moderator you should be above the petty squabbling of the posters. If someone reports a post, you should keep that confidential regardless of how they act afterwards (replying to the reported post). It weakens the reporting system if people can't trust that their report will remain confidential.
Being a moderator is often a thankless job. You won't ever do anything right, according to some posters, and you will assuredly do many things wrong, according to some posters. But lowering yourself to their level is not the solution.
Mike375 01-26-2010, 07:33 AM Why not just have a note for the Watercooler and Political Forums along the lines of:
If you can be offended by forum postings do not enter these forums.
The other way is the member can only enter with a password which he requests.
It absolutely baffles me how anyone can report a thread, especially from the Political forum.

To each his own. I know that if someone said "Hey Adam, I reported you because you did blah blah blah." I would take it as them trying to act like a moderator; antagonistic in the very least.
If people are announcing that they are reporting one another, it inevitably turns into a tit-for-tat situation where reports are flying back and forth due to perceived rule-breaking.
Vassago 01-26-2010, 08:34 AM I have never reported a post. I think if I did I would reply to the thread atleast one more time to inform the poster that I had reported him and why.

Replying is fine, but doing so with a quote is a headache for mods who are intending on removing the post that is quoted.

I'm a mod, and have been, on many forums. I keep reported posts confidential, of course. I also send PMs to those who report posts and who was reported. It was the poster I was responding to that did not
Obviously you have no idea what the situation is pertaining to, so kindly keep out of it.
Adam Caramon 01-26-2010, 08:45 AM I'm a mod, and have been, on many forums.
I find that hard to believe. Labeling yourself as "Super Moderator" and coupled with your attitude towards posters and your actions thus far speaks to a level of inexperience.
I keep reported posts confidential, of course.
I refer you to post #56.

This is an example of an action I'm speaking of. Is this called for? You could have easily PMed this to me if you really thought it important. But you seem to want to make sure everyone knows you're a moderator.

I see no where in that post where I pointed out a post that was reported. I responded to a member publicly complaining about reporting a post and the actions taken by a moderator. He brought it up, not I.

That's again, your opinion. I wasn't treating your post as something needing moderating attention. If it was, then I would have PMed my concerns.
Fifty2One 01-26-2010, 09:23 AM Do not mention a standard you do not keep. So where is the one PM you did not send me for the one report you somehow discovered over time? Also very nice to tell someone with suggestions of how to improve a situation to "keep out of it".
But there you go, you have answered the question of the whiney person who initiated this thread. Again another lie from either one or the other of you seeing as you send a PM to reported posts... or did he not receive his PM also?

LOL, I would believe you except some people seem to take so much way too personal on this forum. This is what turns into personal attacks and reported posts.
Well ONE or two maybe have their pride injured
I'm reminded here of a child at school going off to his teacher complaining that the other children don't like him, won't play with him etc., when said teacher tells him to go away and play nicely with the others he goes off to the head and accuses said teacher of having a class full of favourites and complaining that he's not one of them, must be something to do with a class made up of totally different cultures. Still as they say, you can please some of the people some of the time, you can't please all of the people all of the time

Brian
I don't know.. hang on a minute.
The information in this article explains how to use an operating environment called sandbox mode in Microsoft Office Access 2007. In sandbox mode, Access blocks all expressions that it does not consider safe. In this case, an unsafe expression uses functions or properties that could be exploited by malicious users to gain access to drives, files, or other resources for which they do not have authorization. For example, functions such as Kill and Shell could be used to damage data and files on a computer, so they are not considered safe.
LOL LOL LOL That's something you would want to forget as fast as you could.
So no, it was not funny.
Brianwarnock 01-27-2010, 09:07 AM Hang on a bit, you've just said

Plus some not so hot ideas.
The best might be automatic calenders, not bad.
Better intigration with SQL Server.
A very cool wizard to create an email survey that will update tables or querries when someone answers the email.
Overall I think it was a large upgrade.

Why go to an American chain specialising in coffee for your tea.
Do you not have some nice local teashops, who make tea properly and sell you home made cakes?
Is it cos they invariably have a few seats outside for those daft enough to be smoking?
You'll be telling us you visit Macca Ds next, for a reason other than to drop the kids off at the pool.
Fifty2One 01-28-2010, 05:13 AM For the same reason people go to the chemists to pick up some fresh chops and pop round the dentists because their back has been bothering them.
Someone has to support the big corporate chains otherwise you will have all sorts of local people going into business and keep all of the money local where it contributes to the local economy.
Are you into anti-corporate anti-globalization or something?

Actually, Starbucks tea is quite nice. No we don't have any of those lovely little teashops in Colchester - it's a sad reflection on life I'm afraid that they're all gone.
McDonalds do also sell tea which is reasonable and in a big cup. I wouldn't eat there though.

Two little stories.
1. The weekend that my heat went out and we had below freezing temperatures and SNOW in Florida USA, I found myself driving in my heated car and stopping by a Mickey D's (something I never do!) for a small fry. I was so pleased that they had added, at some point, hot cocoa to their menu. Gosh, did I need some nice hot cocoa to warm my core! I am sad to report, they do not have good hot cocoa. I don't know what it was, but it wasn't what I would call hot cocoa.
2. I have never been a coffee drinker. My favourite ice cream is coffee. My favourite drink is a White Russian which one of the main ingredients is Kahlua, a Mexican coffee liquer. I have NEVER been a hot coffee drinker though. I AM however, a very generous and kind person and have, upon occasion, stopped by Starbucks to buy my fellow co-workers their favorite mochas or lattes as a nice surprise in the morning.
Well, one morning, I did so. And one of my co-workers asked if I had ever tried his particular latte. I confessed I had not. He encouraged me to try the tasty beverage. I politely declined and told him I was not a coffee drinker and had tried several coffees in the long ago past, and there seemed to not be enough cream and sugar in the world for me to overcome the ultimate bitterness I had always tasted. He gave the typical response that I am used to hearing, "Oh... but you will like this!" I declined again. But he was so anxious for me to taste his favourite latte, I finally succumbed and had my first taste of Starbucks Cinnamon Dulce Latte.
"What do you thnk?" He asked.
"Not bad!" I said, surprised that there was no bitter aftertaste.
"Have some more... take another sip" he encouraged.
"Oh, no... thank you very much!" I replied.
"Well, it's better than 'not bad', isn't it?" he asked.
"Actually, yes. It was rather pleasant." I admitted.
"Well, then take another sip!" he prompted enthusiastically.
I brought the cup up to my lips, about to take another sip, when the effects of the first sip hit me.
"OH MY GOD!!!!!" I cried, as I gave him back the cup and turned to sit back down in my chair.
I had just discovered, as most of the rest of the world already knows, Starbucks coffee has a LOT of caffeine. And when one isn't used to caffeine, let me tell you.... WOW!!!!! What a head rush!!!!!
He gave me half of his latte..... and I went back out around 3 for another one.
When I got home, I was a chatterbox and when my family got tired of listening to me, I called a friend who would talk to me for several hours and knows every Starbucks location in Florida.
I did not become addicted. That week I had a total of 3 lattes. I haven't had one in over 2 months. But I have to say, I understand now.
:)
statsman 01-28-2010, 11:41 PM While we do have Starbuck's and those other national chains here the preferred place to buy coffee in Canada is Tim Horton's.
There was rumor making the rounds a few years ago that the reason people kept coming back to "Timmy's" for another large double double was because they put nicotine into the coffee. A foul lie of course but the stuff of a great urban legend. The real reason is because they brew an excellent cup of coffee. They also write the time the pot was brewed on the outside of the pot and if it isn't sold within 20 min. they throw it out.
Tim Horton was a professional ice hockey player who played for Toronto, New York Rangers and Buffalo during his career.
BTW I was in a Starbuck's in Vienna a few years ago. The menus and all of the signs inside were in English. All of the customers were Americans. My guess is the Austrians don't go there, but then finding a good cup of coffee in Vienna is not a problem.

The_Doc_Man 01-29-2010, 01:43 PM As to coffee in New Orleans, two places stand out for getting a cup with some quality to it. First, "Cafe Du Monde" - which has two locations and one of them is less than 1.3 miles from my house. (Yay!) Second, "La Madelaine" pastry shops are particularly good.
For drinking at the office, I always use Folger's because we have a processing plant in New Orleans East. Their coffee beans and instant and whatever else they offer are much fresher than other blends.

It is common courtesy and good manners to say something about it if you plan to delete. We (the normal plebs here) are real people who contibute to these forums and deserve to be treated as such.
I strongly object to being treated as a second class person at the hands of some jumped-up mod.

I think the mods here need to be sent on a course about people skills.

The Jumbo Gulf Shrimp arguably the finest shrimp on the entire planet.
Giving it the right to be called, Jumbo.

This soup is known as Gumbo.
ther eis nothing like it in the world.
The_Doc_Man 02-01-2010, 08:46 AM Thales,
I live in New Orleans. I know a lot about shrimp in their various preparations. I could take you to a restaurant that, when Gulf Shrimp are in season, would have not less than 10 different presentations on the menu in a buffet setting. A definite pig-out setting.
My mother-in-law's gumbo recipe is one of the best I've ever eaten, and my brother-in-law makes a gumbo that is famous in the coastal counties of Mississippi, USA. (My wife's family is originally from Chac Bay, near Thibadaux, Louisiana, which is definitely Cajun country.) However, in all examples of oxymorons I have ever seen, "jumbo shrimp" is always included, so I was being a linguistic traditionalist for just a moment.
I frequent a nice little restaurant that offers boiled shrimp at 20-25 count (per pound), which is really a nice size. That is getting up there. The Popeye's Chicken chain offers "popcorn" shrimp, which would be in the 100-150 count. The middle range, 40-60 count, is what you usually put in a gumbo.
However, some purists tell me that in the 20-25 count, I am not really looking at shrimp, but at prawns, and that they are a different species than Gulf of Mexico shrimp. I'm not enough of a zoologist to know the practical difference.
All I know is when you boil 20-25 count whatever-they-are in Zatarain's Seafood Boil along with some very small-sized (i.e. new) potatoes and some short ears of corn, you have the makings of a true feast. Particularly if you boil that stuff long enough that the cayenne pepper infuses the corn and potatoes beyond just the skins. Don't rub your eyes while eating that stuff.
By the way, just FYI, that picture you posted is what we call a non-creole gumbo. You see, it violates one of the basic rules of "true" gumbo. A true creole gumbo NEVER has both sausage and shrimp in it. A seafood gumbo can have shrimp, crabs, and chunks of previously broiled or grilled fish. "Real" cajuns - like my mother-in-law - also allow for duck meat to be in a seafood gumbo since duck is a waterfowl, but the creole "experts" call that a "hunter's gumbo." A chicken gumbo can have sausage (best if it is Andouille sausage) and other types of meat in it, including venison. But it is either a land-based or a water-based gumbo if you abide by the true recipes.
For forum readers who don't know this, gumbo is Swahili (I think) for okra, and the color of the gumbo comes from two sources. First, you make a roux, which involves browning some flour and butter. That is the brown component. Water later thins it out, but it stays brown ... unless you add some cayenne extract, which would turn it more orangey or even reddish - if you like it spicy.
Thales, if you ever happen to decide to visit my fair city, please try to give me some advance notice. We can get together for a visit to various places that serve authentic creole seafood. Maybe I could even talk my wife into making some of her mother's recipe. She's been known to do that just for the chance at meeting new people.

I thought roux was made with flour and oil, not butter? Anyway, that's how my grandmother taught me to make it. I am curious to try it with butter and to see what difference it might make in the taste...
Thales750 02-01-2010, 09:20 AM Not to put to fine a point on it but a good number of my relatives are named Thibadaux or kibadaux, or some other such bayou country catfisherman name.
Including my grandmother, who was raised on Lake Charles.
Now of course none of that make me an expert by any means. But she put Andouille in shrimp gumbo and so do I.
I may send you a block of it in a frozen box if you like. That particular bowl was made in Anahuac TX, over the Christmas Holidays.
By me.
I agree with Kryst51, I would normally use oil for roux, and butter or fat for gravy.

The great majority of American homes are made of wood Rich.
And normally we bake our earth before we use it in construction.
Fifty2One 02-01-2010, 09:52 AM They do not make wood homes in England. They have a shortage of trees in England because they used them all up long long ago to build ships to be sunk in far far away ports while they tried to 'rule the waves'.

Well, as my grandmother is cajun I think that my grandmother is probably on par with his mother-in-law, I wonder if it's just different customs, or different recipes, maybe different ingredients available, or class differences that cause the different ingredients, then over time people get used to the way they make it.... My grandmother didn't learn from a cookbook, that could be it, she learned it from her mother.
The_Doc_Man 02-01-2010, 03:42 PM Thales, no need to send me any sausage. We've got the Rouse's Supermarket chain here. They originated in Thibadaux and have grown considerably. They have a "Cajun" section where we can get domestic sausage including Andouille and other kinds.
So, have you ever been to la bucherie in any Louisiana festivals?
Kryst - You can also make a roux with flour and oil, depending on the oil. Corn oil, OK. Other mild vegetable oils, OK. Olive oil would put the taste a little bit off.
Rich, we still have wood-frame houses here, some with brick veneer over wood slats. Others have siding over the frame, with plenty of insulation between the bricks on the outside and dry-wall on the inside. We were starting to see some steel-frame houses, though, because before the REIT stock crash, home-building had depleted inventory levels and steel frame was actually cheaper. I don't know about the relative prices now, though.
I know that if you have a steel-frame home and concrete pre-fab walls (as a middle layer), your home insurance goes way down because your house is almost fire-proof and insect proof, and wind damage is a lot less likely as well. You save so much on insurance long-term that you can afford more square footage in living area.
Thales750 02-01-2010, 04:21 PM I was offering to send you a frozen block of my Grandmother's Gumbo. Which of course, I carry on.

Looking at a map of the US, the bottom 'tip' of Texas looks to be almost dead centre of a North-South line drawn down the middle of the country.
How far South does a state need to be to qualify as Southern? Doesn't bordering Mexico make Texas South-Western, at least.

Texas is an unusual situation as it is BOTH a Southern and Western state.
In a situation where you expect Texans to act like southerners, they act like westerners.
In a situation where you expect Texans to act like westerners, they act like southerners.
It makes perfect sense to Texans but it is very confusing for the uninitiated.
The south-west in the USA is generally considered to be New Mexico and Arizona. This naming pattern is again confusing as Ohio is considered a mid western state and it's nowhere near the middle of the country.

The_Doc_Man 02-02-2010, 01:36 PM Actually, the designation of southern, western, etc. in the USA seems totally arbitrary only when you look at it in modern context. Originally, designations included mid-west, west, etc. based on the USA prior to the admission of the states on the western side of the Louisiana purchase. From an historical perspective, therefore, Texas is a western state.

I should think you would have been able to find that on the internet 25 times by now.
Why call it a "steer"?
Surely it is either a cow or a bull.
What is the difference between a cow and a steer?

See the big horns? You grab those and "steer" it.

Too busy spooing inaccuracies.

You get milk from a cow.
You eat a steer.

This was good play on words George. Cracked me up.

No, there are cows, bulls, and steers. Steers are bulls that have been castrated.
Steers are bulls that have been castrated.
But if they're no longer up to the job, what's the point in having them?
georgedwilkinson 02-04-2010, 07:12 AM Pets, of course.
Brianwarnock 02-04-2010, 07:31 AM I make that 30 - Love to George.

Thales750 02-04-2010, 09:12 AM And still, not a single British person has tried to name that steer.

Is a longhorn a breed, or are you looking for something more specific?
Vassago 02-04-2010, 09:45 AM The best beef is still true Japanese kobe beef. I've never had a steak like it.

*sigh* - it's a Texas Longhorn.

The_Doc_Man 02-04-2010, 11:08 AM I think I've seen that steer elsewhere - perhaps in a Chick-Fil-A commercial, holding up a sign that reads "Eat mor chikn"
But then, no-one ever said that steers could spell, and it's hard to paint signs properly when you have no opposable thumbs. (with apologies to fans of Gary Larson from Playboy.)

That particaular Longhorn, lives next door to my syster.
Rabbie 02-04-2010, 11:36 AM The best beef is still true Japanese kobe beef. I've never had a steak like it.I've not had the opportunity to try Kobe beef but for pure flavour I don't think ou can beat prime Aberdeen Angus steaks

Americans love our Angus beef (I know it’s Scottish).
I have Kobe beef and its upscale version Wagyu at the local Sushi bar regularly.
I think it’s a lot like Cuban cigars (which I smoke when I can get).
More than a little of the enjoyment, is the nature of the marketing.

True Kobe comes from a form of Wagyu cattle. The kobe beef they sell here in the US is not even true Kobe beef in most instances. We screw up the true definition of Kobe.
Real Kobe beats the heck out of Angus any day IMO.

I think it depends on how your going to cook it. The Sushi bar I go to is a fairly upscale one. Operated by belive it or not Koreans.
It's the version that gets the massage and all that. Plenty of marblized fat.
But it would not be as good as Angus cooked on the grill. Just like a Cuban cigar is not any better than a Padron Aniversary.

Until you have it in Japan... incredible... :D

That's illegal in the US surely, you should be charged with criminal activities:mad:

Who said he smoked them here? He could easily have went outside the US to smoke them. ;)
Fifty2One 02-05-2010, 05:26 AM US only has long term problems with Cuba because it was the big money playground and they got kicked out by Fidel.

Ah but that is often the case, the sushi bar we go to is good, but doesn't compare to the ones we went to in Japan.

Rabbie, a friend of mine raises Limousin cattle and I have to tell you, it beats Angus for taste. We see a lot of different beef here in the midwest. Texas beef is tough and stringy, just like the population down there :D.

No one eats Longhorns any more. Long and stringy indeed.
You know why people settled in Oklahoma...they got lost looking for Texas. lol
Thales750 02-07-2010, 03:30 AM Who deleted the wonderful thread with all the blue letters? It was just getting good.

Since he can't even get outside his own front door at the minute he must be smoking them at home, I'll have to call the department of defense, the dept.for homeland security, the FBI, the CIA, the national guard, the Sherif,Clint Eastwood and uncle tom cobbly and all and hope that he's got enough to go 'round:p

Best steak I ever ate was in Canada, the knife just glides through, here you have to use a hacksaw on the bloody stuff!
