Archiving 2003 Data

I'm preparing for 2004 and not sure the best way to remove 2003 invoice data from my database. I want to take all old (2003) data from the 2 tables I have and archive them. The reason why I want to take them out of the main tables is because the tables are huge. I still want to have them accessible if need be. I would greatly appreciate anybody's help. Thanks!
