It shouldn't really be totally out of scope. Even if your payments don't pay dozens of invoices, you still need this sort of structure. I expect at some point you will get a bill that's paid in two instalments, so you need a way to record and retrieve the two payments that relate to the invoice, and I expect you get payments that pay multiple bills. The system has minimum requirements that need to be satisfied. otherwise it may be easier to continue with whatever system you use at present.
What you find is that with big systems, the way of working changes. Whereas a small company might print out an outstanding balances list from time to time to review outstanding debts, a very large company might not do this. It still has outstanding balances, but it has to manage them in a different, more sophisticated way.
