Converting AC2003 to AC2010 - Menus and Toolbars

I'm thinking of changing my AC2003 db to AC2010
My main concern now are the custom menu and toolbars.

Can I keep the old system ?
Can I have Menu and Sub-Menu?
Or should I better keep it as AC2003?

I don't like the new Ribbons :mad:

1. I know I'm not as smart as MS engineers, but In my point of view you should have the most common tasks on the toolbar and have the less common ones hidden in menus.
The new ribbons system works against this.
2. Using visual clues to find what you'r looking for is good, but it's not good in very crouded Environment. And it sure not very good at first when you have only very little idea how it should look like.
Try to find a person in a crouded party, when you only have little idea how he looks like. Sure he can hold a sign with his name, but what if all other persons do the same?
Isn't it much simpler to find him in the guess list, sorted alpahbet? Even if you don't know his exact name you sure have a good idea.
 
If Image is your main concern I think you will find the flow of time against you.
I was not happy with the 2010 look but very soon after, can't remember how the old features worked.

I should search the depreciated features on this forum and Google as there may well be some issues to address.

We converted from 2000 to 2010 had quite a bit of maintenance to bed the database down.

See this - I have done this recently (have since moved on to custom ribbon to see how it works). You custom menu does come into Access 2010 - they will be in the Addin tab) and can be used.
