FE and BE connection question

hello, i looked through the threads here, and while i found a few that i thought may give me the answers i am looking for, i did not find them... sooo.....
i have recently taken over a network that is used only for an access database for a free food and clothing ministry. i recently replaced the old computers (2 front workstations and one office pc acting as a server also) with new ones, adding a few, but for now kept the old "server"(a normal xp machine with the BE on it)... the old computer is named "office"
we were donated a very nice server which i have up and running now with server 2003 small business, which makes our new system, (four front pcs and an office pc all running xp pro, and this server, named "BOL-SERVER". i am now ready to transfer the BE to the server and retire the old "Server".
Here is my question... how does the FE access know where the BE access is located? i have looked high and low in the FE, but cannot find anything about the BE or the old pc it was located on called "office".
while i have created a few very simple access databases years ago, i have never dealt with one that is this complicated and has a frontend and a backend....
we are open every tuesday, and while pretty slow, things have been going good for the last couple months.... while i need to get this new server online anyway, i REALLY need to figure this out, as this coming saturday, Nov 20, we have our huge Thanksgiving giveaway, which i need to add two extra pc's to the system since we will have 4-6 thousand people show up, if it's anything like past years. i'm afraid the old xp machine will not be able to handle 7 pc's since it is barely keeping up with the 5 on it now.
any help would be super... and i thank you in advance...

It is done with the Linked Table Manager. In Access 2007 that is on the Database Tools Ribbon.
