Using DoCmd.TransferSpreadsheet I'm exporting a table which has a couple of Yes/No fields formatted as Yes/No. However when I export, they appear as TRUE/FALSE? Am I doing something wrong?

True/False, Yes/No and -1/0 are much the same as far as Access is concerned.

You can take full control of the process by converting text in the query before export. This dan be cone with a linked table or using a Format entry that converts numeric values to text.

That sounds correct. Whilst Access displays a Check box for a Yes/No field it actually stores a value or -1 for True or Yes and 0 for False or No. When this transfers to Excel you get the Text values that correspond, with the stored Check Box value i.e. True or False.
