New to Microsoft Access world, should I invest the time learning it from scratch or go for the C#, SQL Server, and ASP path? Please advice

Another argument for starting with Access, learning the principles of good table design, building a properly normalized set of tables, and a rudimentary interface to begin. That will take much less than 6 months, even allowing for plenty of time to learn good table design principles BEFORE you begin.

That is true. Being comfortable with the complete development cycle in MS Access allowed me to transition to Blazor / SQL Server much more easily.

I also have a mentor for the MudBlazor UI framework. Without him I probably wouldn't be able to get to a professional looking product.

Keep in mind that while many will or have pointed out the "fast results" Access can give you, what that really means is it can give you fast bad results and you can make fast mistakes. Regardless of which path you take, both will require you to learn from the beginning in a disciplined, linear fashion and I recommend doing THAT instead of trying for "fast" anything. If you try to shortcut learning and expect Access to give you fast results, all you're going to get is fast mistakes.
