Changing recipient of e-mail collection form

OK, I'm not quite sure how to phrase this, so bear with me:

My database is set up to collect information via an e-mail form. It works very well. However, I'm going to be leaving the project soon, so the forms should go to a different user. How can I arrange it so the forms will go to the new user, and subsequently into a table in the database?
