I have hopefully really simple and quick question, is it possible to create a query that will delete the fields within a table?

Yes, but this screams of a poor implementation. Just to be clear you asked how to delete a field--as in wipe that column out completely. So here's the link for that: http://office.microsoft.com/en-us/access-help/alter-table-statement-HP001032207.aspx

You didn't ask how to delete a value from a field. What you asked is a red flag, databases aren't designed to have fields quickly added and deleted by using a query. You wouldn't want a query laying around for a end user to click that would have that power.

Can you explain why you need to do this? Provide table and field names to give an example.
