Make charts friendly to non-color printers...

I am trying to keep my charts from being color-dependent for people to read them. I have a bar graph, for example, with seven different colors being compared in a bar graph. In the design view the chart shows only four of the seven "data series." I have been able to format them one by one with shades of gray, and it works, but how can I access those other remaining three data series when they are never shown in design view?

Thanks to anyone who has an idea on this.
