Question regarding exporting form fields as xml

I'm curious as to whether or not something is possible within the format that I need it. Our mailing center has a pdf form with an email but that once filled out forwards data entered in an xml object with the form information, unfortunately the mail center has been less than cooperative in terms of making entry of the form more efficient. I'm wondering however if there is a way to make a form in my database that automates certain fields and can export as an xml object in a similar format.

Our use of the mailing form is namely for shipping equipment for repairs/returns. I'd like to have a form that automatically fills in to and from information based on what sort of equipment it is, leaving fields such as rma and shipping method for us to enter automatically. After everything is entered I'd like to email it as an xml object. Here is how the xml is laid out in a completed form:

I anyone familiar with this process? I know there is an export to xml option but can I automate it to be emailed and will it be in the same format as above?

I tested out exporting a form as xml and it exported information from everything within the table, not sure how to limit the export to only the information in the currently active form.
