Suppose I have 5 stages of development of a product. There are a lot of factors that go into determining when a certain stage is complete and they do not have to happen in any particular order. I don't have fields in my table representing each stage, however I can use one field, STATUS, to represent all stages as a number, i.e. 00000 - 11111 (0-31 in decimal) where 0 is no stages complete and 31 is all stages complted with all combinations of stages represented by the numbers in between.
I want to filter and list products based on which stages are completed. e.g. show products with stage 1, any product with ----1 will be returned, or show products with stage 3 and 5, any prodcut with 1-1-- will be returned. How would I go about making this query?

This is not Storing conditions in a field it is simply filtering records to show on a form.

You would have or will have to make a query to collect the Data Source for your Form and one of the fields in this query will be [ProductStatus].

At this stage, your form will show All records.

Your Filter can be on the form by way of 5 Command Buttons that each Filter on one of the five Status levels.

Your Query/s could include a calculated field that interprets the current code to 1,2,3,4 or 5 if this will make your form filter easier.

Many options on how you setup your filter/s but first get all the records to show and consider the extra calculated field in your query.

You can then get help with parts of your query and or your form filter/s (vba) when you have the questions to ask on this.
