Where Do I Start Please

I have been using Access 2000 for sometime and most of the time I can do what I want, however I am stuck and do not know how to proceed.

It would be too much to describe so I have attached a pdf file showing what I want to achieve - it is to get time entered for an employee in a time monitoring system.

What will the table structure look like and where do I go from there.

Any suggestions appreciated.
