date issue & saving an access project

1stly.. im sorry coz not good with english..

i have two questions..

1st.. date issue.. i have a database that i can transfer data from access to word form.. in access i've changed date/time format to medium date..

but whenever i click a button to transfer the data to word file.. in word it shows like: 2/19/2011.. what i need to do so that it will show 19-Feb-2011 or 19/2/2011 in word file..

2nd question.. how to save a access project or finalize the project so that when anyone open my file it'll show form view.. dont know how to say it.. its like when i click to open it, it'll just show a form to fill in..
