Is there a quick and easy way of having text change colour when the pointer is over it, in excel?

No, and truth be told I can't even think of a complicated way to do it. The issue is there is no mouse over event in excel and the ways of mimicing this functionality look like a pain in the arse.

However.... you may like to change the mouse pointer to a hand by creating a hyperlink to the host cell. i.e. A1 hyperlink to A1 resulting in no actual movement.
