you can stop users seeing your code by compiling the database in an mde/accde rather than a mdb/accdb
you can lock access down pretty well. most users will accept what they are given.
By all means remove navigation buttons, and record selectors, and get the interface to work in the way you want. As I say, personally, I would not try to change the default behaviour of access without good reason, and in some cases it is quite hard to do so. If you are not careful, you end up using unbound forms instead of bound forms, which defeats much of the usefulness of access.
