Memo field converts everything after char 255 to special characters

Hello,
I have an unbound form where the user enters feedback, usually > 255 chars. When they hit the "Submit" button, an append query adds this to a memo field on a table. A memo field should be able to hold 65,000 some characters however everything after 255 turns into a special character, mostly boxes. Any ideas on how to retain the text?

How are you viewing the Memo field?

If it's in a report or form, check the properties of the field in the report or form. Make sure "Can Grow" is set to Yes.

Memo field

Can Grow and Can Shrink are both set to "Yes". On the form view, everything looks fine, but once it's appended to the table it gets truncated. I'm seeing that by going directly to the table, and I also pulled it into Excel as a database query.
