I am reading object-oriented modeling and design with UML for school. Do any of you actually draw these models this book is talking about? Such as class modeling and state modeling? There are probably more that just the 2, but that's all I've gotten to so far. It seems unnecessary to me.

For larger projects, yes. These are preliminary design activities you are talking abut. Application architecture is important. Project management is important. In most organizations, IT has a yearly budget, and a project only gets approved if it has good ROI. Can't know ROI unless you know the cost to do the project. Can't know that unless you PM'd it out, made a real work breakdown structure, etc.
