In the Order details Table how is it possible that the Product Name (text) is displayed and yet the field format is Number

It's because this field is a lookup field to table product, which by the way isen't a good idea.

Lookupfields is best handled of forms and NOT in tables.

How you create the validation rule:

Must include the @ symbol in the email field? (preferably to be done in a statement for the criteria part of the query)

Don't matter what the field format is the column count is set to "2" in the lookup same as any combo box on a form might be so that the data displayed not actually stored bound column = "1" thats the tables actual stored value hence Number....
