Selecting maximum fields in a record

Which code or a query or an expression or a function that can select ONLY Seven highest fields out of eight fields and add them on each individual records.

It is probably easier to add them all together and subtract the lowest value

Sounds like a problem that would be much easier to solve if the data was in rows, not columns.
