Special characters in table values

My database has several tables (and queries) that have fields that contain people's names. Some names, like O'Neil, contain apostrophes. Other fields contain couple names, like Tom & Laura Jones. Both the ' and the & prevent queries, forms, and reports from working correctly. Is there anything that can be done about this?

I'm not sure where a delimiter comes in to play. We are entering the name information using a form. Whatever is typed in the field goes in as a value of a field in a table. The special charactes are in the table. Problems arise when trying to get these values back out. Apostrophes cause syntax errors. Ampersands cause null values to be returned.
