Sums in Forms

I'd like to set up a running total in a form for each type of publication

ie if I have ordered 300 leaflets on Quality Assurance and post 25 out I'd like to be able to see the remainder of 275 and so on so that each time somebody sends a batch out they know how many is left

at the moment it is adding up all totals whether leaflet, booklet or flyer etc - not sorting them according to type
