I have a Yes/no Field in my DB have have formatted is so it uses

;"Packing";"Completed"

Can I use a third like

;"Packing";"Completed"; "Awaiting Payment"

The answer is ... yes and no. Sorry.

Actually you might be able to use a default value for one value. Checked for anther value and Unchecked for the third.
I haven't fiddled with it but you could check your help files under:

Format Property — Yes/No Data Type

I think you could use an option group.
