The simple answer is that they are different so store them differently. I would think that you could come up with reasons to combine the tables but that simply creates surplus code. Do you have something special on your mind other than what others are telling you.

A point of interest. The Sum of the Tax on each order does not necessarily balance. It may be Dollars out. This is simply written off. If you notice GST the Tax department always rounds this off to the nearest dollar.

Not sure what this means when you say a record drops off. How does the user gain access to the Table, Query or whatever it is that allows them to delete or add a record. Have you got any further information that may help.
