I'm working in Access 2007, with an "accdb" file (I only just noticed that the extension is different to other versions). Just recently (didn't notice when it happened) the database has created a "database.mdb". If I delete it, it reappears after I next close my database. If I try to open it, it says "Database type unrecognised". I've tried opening and closing other databases, but it only seems to be the one that it happens with.
Any ideas?

I don't exactly know your issue but something which might shed light on it is as follows.

In Access 2003 often a database is compacted and repaired on close. What this usually involves is a new temporary file being created and then this overwrites your original file and the temp file is deleted.

If your original database is located on a server restricted user permissions can lead to problems similar to those you appear to be experiencing.
Depending on your server setup sometimes users do not have the admissions to delete files in which case you can get a series of these temporary files appearing.
